Can’t live on takeaway when there’s only about 3 takeaway options in town, it’d get very boring very quickly.

However at the same time I definitely ain’t cooking up any MasterChef dishes, not worth it for one person and no dishwasher

i made an amazing sticky date custard merangue cake yesterday, to die for, lot of work though!

been cooking a lot of big platters full of roast vegies so we have them for lunch too

Sweet potato and lentil curry with roasted spiced chickpeas

Easy one pot dish. I found the roasted chickpeas didn't work that well so left them out the next time I made the curry.

Chicken shawarma traybake with sweet potato, feta and cranberries

Another one tray/pot dish. I have used sultanas when I didn't have cranberries. Cavolo nero is a form of kale but can be replaced with spinach. Danish feta instead of Persian, roasted almonds instead of smoked. And you can thinly slice sweet potato if you don't want to do strips. You will need a large roasting dish to allow enough space for all the ingredients to cook properly

Very easy and quantities can be adjusted to suit serves required. I prefer to use chicken drumsticks.

Haloumi spanakopita

This makes a lot of filling so a big mixing bowl is required.
The 2nd time I made this I lined base and sides of dish with pastry, put in filling then topped with pastry so it was more like a pie which worked better. Used Danish feta which is easier to get than Persian and if you can't be bothered grating the haloumi, you can chop into small chunks.

Salmon with miso and soy noodles

Works with salmon fillets skin on or off. I didn't add the water to the paste the 2nd time around as it made it too runny. Baked the salmon in the oven (fan forced grill). Added frozen Umami Edamame to the noodles instead of sprouts.

I made this last week. A cross between a cake & a bread and good way to use overripe bananas (I always have a supply in the freezer). I used Plaistowe Dark chocolate but any good quality dark chocolate would be fine.

I didn't bother with the icing on this cake but it is yummy. Can be used as a dessert warmed up with custard or ice-cream. Needs to be kept in the fridge if not eaten within a couple of days

Cooking myself a Fathers Day Dinner

Lamb Shanks in the crockpot since before lunchtime
Saute some thinly sliced cabbage with bacon in butter for the base
Lebanese eggplant, zucchini, onion and capsicum in a casserole dish in the convection oven for the side.

Wash down with Sangria.

Mum really liked the fathers day dinner, I'm doing that cabbage and bacon again.

Tonight was crumbed lamb cutlets from Paddy's with some sweet potato mash, steamed greens and gravy. Fkn yum.

Yesterday made Veg bolognese in the slow cooker:

Button mushrooms can be used instead of swiss browns (or 50/50). Yesterday I used 200g button mushrooms and a zucchini instead of swiss browns. Zucchini added a bit more liquid to the dish but I just cooked it bit longer to thicken up.

Kalamata olives have a very strong taste so I leave them out and add when serving. Good for those like the 25 year old who do not like olives.

Leftovers keep in the fridge for a couple of days and it freezes well.

It's an interesting combination but it works. Red miso has a different flavour to white miso.
Worth a try, like most recipes you can tweak to suit your tastes.

I bought a tub of red miso form the local Asian grocers.

Ta for that, Miso is 1 ingredient I know bugger all about. I tried some Miso soup once and didn't really like it, but that's it.
